Sam Monastyrskyj - Our New Chef

Cooking and being a chef is all I have ever wanted to do. Having grown up in a family that has food at its heart, it just felt like a natural career path for me, with both my mum and granddad being huge inspirations. Halton Tennis Club was also an inspiration as I was a junior player here. My first professional cooking experience was in this very kitchen with Charlie as my boss - the roles are currently reversed. Many players recognise me from this previous existence.

After studying at Aylesbury Grammar School, I made the decision to turn down a university place to pursue cooking. Qualifications at Aylesbury College followed, with experience coming from Waddesdon Manor, The Aubergine in Marlow as well as stints at Raymond Blanc's Le Manoir aux Quat'Saisons and The Hand and Flowers with Tom Kerridge. I then took the opportunity to work in France, with a total of a year being spent in the Alps, and 6 months in the South of France. The past year has seen me working privately for a family in the Cotswolds. The opportunity was too good to miss, to "come home" and develop this quirky restaurant into a serious dining experience while still catering for the insatiable demand for coffee.

I have been sourcing local produce to ensure that I can offer an interesting seasonal menu with the freshest possible ingredients. I have maintained my links with Aylesbury College and I hope to be able to provide relevant experience of high-quality food from a small kitchen. For example, our burgers are all freshly made onsite with beef supplied by King's Farm Shop and include our own home-made bacon. Watch this space for other local suppliers.
